Keep the sameOven temperature
This is a rule of thumb, not a guarantee: shallower batter bakes faster, deeper batter slower, but less than proportionally. Always test for doneness. A toothpick in the center should come out clean or with a few moist crumbs, or check the temperature: about 200-210°F (93-99°C) for most cakes, 190°F (88°C) for soft enriched bread, and 200-210°F for crusty lean bread.
How to use this calculator
- 1Enter the bake time from the recipe.
- 2Enter the shape and size of the recipe's pan, then of the pan you're using.
- 3Say whether you scaled the batter to fit. If not, the batter will be thicker or thinner than intended.
- 4Read the estimated time and start checking at the earlier time shown.
Tip: This is an estimate. Trust a toothpick or thermometer over the clock.
How it's calculated
New time ≈ Recipe time × (batter depth ratio)^0.7, a rule of thumb, because time changes less than depth does
We do the math at full precision and only round the final answer, so the numbers you see are as close as kitchen measurements allow. The assumptions and limits are listed alongside.
Worked example
Scenario: A recipe calls for 35 mins in an 8" pan; you are using a 9" pan.
InputsOriginal 35 mins, 27% larger surface area
CalculationExpected time reduction approx 15%: 35 × 0.85 = 29.75 mins
ResultCheck doneness at 28-30 minutes
Common questions
What is the internal temperature of a fully baked cake?
Most butter and sponge cakes are done at about 200-210°F (93-99°C) in the center. Dense or very moist cakes like cheesecake are done much lower, around 150°F (65°C).
